Always put your dried fruit in your granola AFTER it’s done. If you put it in while the granola is in the oven, it will dry out even more and taste bitter. I learned the hard way! Here is my recipe for my favorite granola:
Old Fashioned Oats – 4 cups
Brown Sugar – 1 cup
Vanilla – 2 Tablespoons
Cinnamon – 1 Tablespoon again according to taste
Coconut Oil – about 1/4 – 1/2 cup. I find this oil drys faster than vegetable oil
Raisins (optional) – 1 Cup or less according to taste
Put the oats, brown sugar and cinnamon in a bowl large enough to accommodate stirring. Mix the oil and vanilla together and pour it into the oatmeal mixture, stir until all is well coated. Put this mixture onto a cookie sheet (ungreased) and bake at 300 until dry. Depending on the oven, it could take a half hour or longer. Check it every 10 to 15 minutes for dryness. This granola does not clump.
