Just a quick note on making brewed coffee. Did you know that a pinch of salt will take away the bitterness? If you have to drink gas station coffee (some isn’t to bad) which can be super bitter, take a pinch of salt from the hot dog area and give a stir, you will be surprised how much better it tastes! How about a nice hot roll with melting butter?? Nah, not the butter but it sure is nice to have a hot, homemade roll right out of the oven! Not sure how to make rolls? Follow this recipe. . . if you have a bread maker. My wrists are not strong so I can’t do all the kneading necessary thus the reason I use a machine :).
1/2 cup water
1/2 cup milk – I use whole milk
2 Tablespoons butter
3 cups King Arthur Unbleached, All Purpose Flour ~ You can also replace 1 cup of white flour with 1 cup of wheat or oatmeal. When you change the flour you will have to change the liquid. To test, use a finger to push slightly on the dough, if you have some on your finger, it is perfect. Add water or milk a little at a time if you don’t have any sticking to your finger to get it to the sticky consistency. Sticky = soft.
2 Tablespoons sugar
1 teaspoon salt
1 Tablespoon bread machine yeast.
Place all dough in the machine in the order listed. Select the SWEET DOUGH cycle. Turn dough onto a floured area. With floured hands pull off just enough dough to fill your palm when you grab the dough. Cup it in both hands very lightly and round it just by pressing lightly. Place onto parchment paper that has been greased and let rise until double (30-45 minutes or whatever it takes. Go for the rise not the time). Place into a 350 degree oven until light brown – ovens vary so this could be 15 to 25 minutes. Let sit for a few minutes before slicing or ripping open so they don’t become sticky. Enjoy! Should yield about 10 rolls.
